Tri-Tip Baguettes with Bleu Cheese Butter

You might be tempted to wolf down the tender strips of decadent tri-tip right as they come off the grill. But if you can be patient enough to apply the rich bleu cheese butter and insert it into a toasted baguette, you’ll find sandwich bliss.

Ingredients

  • Tri-Tip

    • 2.5 lbs. Tri-Tip Buy Now +
    • A Rub of your choice
  • Bleu Cheese Butter

    • 1/4 stick of butter
    • 4 Tbsp bleu cheese crumbles
    • 1/4 cup heavy cream or half and half
    • 4 Tbsp cream cheese
  • Baguette

    • 1 Baguette loaf
    • balsalmic vinegar
    • 2 Tbsp parsley (chopped)
    • Extra Virgin Olive Oil

Directions

Tri-Tip

  • Liberally apply your favorite rub or seasoning to all sides of the tri-tip – or just use salt and pepper.

  • Cook using indirect heat in an oven, on a grill or in a smoker at 300 degrees until the internal temperature reaches 120 degrees for medium rare at 10 degrees for medium and 20 degrees for medium well.

  • Turn up your grill – or, if using an oven, use the broiler – to the highest setting. Once hot, sear each side of the tri-tip for 60-90 seconds per side. Remove from heat.

  • Allow tri-tip to rest for 10 minutes, then slice thinly.

Bleu Cheese Butter

  • Heat butter in small sauce pan on low until melted.

  • Add cream cheese and milk/cream and bleu cheese to pan. Whisk on low heat until smooth and melted.

  • Pour mixture into small glass bowl and set aside (room temp) to cool/harden. In order to make this spreadable you will want to keep this at room temperature. Feel free to store any of it that is left over in the fridge. Do not be scared to add your favorite fresh herbs to the mixture before you pour it into the bowl – parsley, chives, or basil all make great additions.

Baguette

  • Cut the Baguette lengthwise and brush the olive oil on both halves.

  • Place in the oven and broil until edges turn golden brown.

  • Cut pieces of baguette diagonally to create 6 sandwiches. Spread bleu cheese butter on all of the bread slices. Sprinkle parsley over the spread.
