Culotte Roast with Fingerling Potatoes & Baby Carrots

The Culotte is a flavorful cut of beef from the top sirloin. It makes a spectacular roast that’s perfect for any occasion. Here’s a recipe that’s so quick and easy, we call it the Weeknight Roast but it also works well for a special weekend dinner.

Ingredients

  • Culotte Roast with Fingerling Potatoes & Baby Carrots

  • Herb Rub

    • 2 sprigs fresh rosemary
    • 1 teaspoon fresh thyme, chopped
    • 1 teaspoon fresh Italian parsley, chopped
    • 1 tablespoon black peppercorns
    • 5  garlic cloves, peeled
    • 4 tablespoons olive oil
    • 4 tablespoons butter
    • 2 tablespoons kosher salt
  • Fingerling Potatoes

    • 1 tablespoon olive oil
    • Salt and pepper to taste
    • 2 sprigs fresh rosemary
  • Glazed Baby Carrots

    • 1 package baby carrots
    • 1 tablespoon brown sugar
    • 1 tablespoon butter

Directions

Culotte Roast with Fingerling Potatoes & Baby Carrots

  • Generously spread the Herb Rub over the Culotte and place on a roasting rack, in a roasting pan.

  • Reduce oven to 350 degrees and place roast on a center rack. Cook the roast until the internal temperature reaches 135 degrees in the center for medium rare (about an hour) then remove from the oven.

    Let the roast rest 20 minutes.

  • In a sauté pan, combine carrots, brown sugar and butter and heat on medium heat until carrots start to soften and glaze.

  • When ready to serve, place the potatoes back in the oven for five minutes to reheat. Slice roast against the grain and plate.

Herb Rub

  • In a blender, combine all Herb Rub ingredients and pulse until mixture is a coarsely chopped paste.

Fingerling Potatoes

  • On a foil lined sheet pan, toss washed potatoes with 1 tablespoon olive oil. Sprinkle generously with salt and pepper. Spread out evenly on the sheet pan and lay a few sprigs of rosemary over the top. Bake at 400 degrees for about 25 minutes, or until soft.

Glazed Baby Carrots

  • In a skillet, melt butter on medium heat and add carrots and brown sugar. Cook carrots about 10 minutes, stirring often until they soften up to desired texture.
