Cubano Sandwich with Kurobuta Pork and Ham

    • Boneless Kurobuta Half Ham Buy Now +
    • Kosher Salt
    • Black Pepper
    • 1 Jar Dill Pickles
    • 1 Cup Yellow Mustard
    • 1 tsp Honey
    • Sliced Italian Bread
    • Sliced Swiss Cheese
    • 1 Tbsp butter (softened)
  • Marinade

    • 3/4 Cup Olive Oil
    • 1 Tbsp Orange Zest
    • 1 Cup Orange Juice
    • 1/2 Cup Lime Juice
    • 1/2 Cup Cilantro (chopped)
    • 2 Tbsp Fresh Mint (chopped)
    • 5 cloves Garlic (minced)
    • 1 tsp Fresh Oregano (chopped)
    • 1 Tbsp Ancho Chili Powder
    • 2 tsp Cumin

  • Liberally season pork loin on all sides with salt, pepper, the ancho chili powder, and cumin. Let the seasonings sit on the meat for 20 minutes then put in a ziplock with the marinade. Refrigerate pork in the marinade for at least four hours, but preferably overnight.

  • Preheat oven to 300 degrees. Place loin on a rack within a roasting pan. Roast the pork for about 1 hour until the internal temperature reaches 145 degrees. Let the pork rest 10 minutes while heating oven to 500 degrees. Place pork back in oven for 5 minutes. Remove and slice.

  • Slice ham thinly from half ham. Cook on medium-high heat in a heavy skillet until sear marks are present and ham is heated through.

  • Spread mustard liberally¬†on two slices of bread. Layer sliced ham, sliced pork, cheese and pickles inside the sandwich. Butter the outside of the bread.

  • Grill sandwich in a skillet at medium-high heat. If you have a panini press, use it to great effect here. If not, place a smaller pan on top of the sandwich as it grills to press it down. Grill both sides until golden and cheese has melted.

    Serve immediately.

Marinade

  • In a bowl, mix olive oil, orange zest, orange juice, lime juice, cilantro, mint, garlic, and oregano.
