Cubano Sandwich with Kurobuta Pork and Ham

The eclectic Cubano brings together a collection of simple flavors to create a whole greater than the sum of its parts. Just one bite of this sandwich combining ham, roasted pork pickles and mustard wrapped in melted Swiss cheese and toasted bread will help you understand why this is a sandwich with its own cult following.


  • Ingredients

    • Snake River Farms pork loin roast Buy Now +
    • Snake River Farms Kurobuta ham, sliced Buy Now +
    • Kosher salt
    • Black pepper
    • 2 dill pickles, sliced
    • 1 cup yellow mustard
    • 1 teaspoon honey
    • Sliced Italian bread
    • Sliced Swiss cheese
    • 4 tablespoons butter, softened
  • Marinade

    • 3/4 cup olive oil
    • 1 tablespoon orange zest
    • 1 cup fresh orange juice
    • 1/2 cup fresh lime juice
    • 1/2 cup cilanatro, chopped
    • 2 tablespoons fresh mint, chopped
    • 5 cloves garlic, minced
    • 1 teaspoon fresh oregano, chopped
    • 1 tablespoon ancho chili powder
    • 2 teaspoons cumin



  • Liberally season pork loin on all sides with salt, pepper, ancho chili powder and cumin. Let the seasonings rest for 20 minutes then put the loin in a plastic bag with the marinade. Refrigerate for at least four hours, but preferably overnight.

  • Preheat oven to 300 degrees. Place loin on a rack within a roasting pan. Roast for about 1 hour or until the internal temperature reaches 145 degrees. Remove the pork and heat oven to 500 degrees. Place pork back in oven for 5 minutes to sear and brown the exterior. Remove and slice.

  • Warm ham slices in a skillet over medium-high until lightly brown and ham is heated through.

  • Spread mustard liberally¬†on two slices of bread. Layer sliced ham, sliced pork, cheese and pickles inside the sandwich. Butter the outside of the bread.

  • Grill sandwich in a skillet at medium-high heat. If you have a panini press, use it to great effect here. If not, place a smaller pan on top of the sandwich as it grills to press it down. Grill both sides until golden and cheese has melted.

    Serve immediately.
