Ingredients

  • Culotte

    • Snake River Farms American Wagyu Culotte Buy Now +
    • 2 tablespoons kosher Salt
    • 1 tablespoon black pepper
    • 1 tablespoon garlic powder
    • 1 tablespoon sweet paprika
    • 1 teaspoon onion powder
    • 1 teaspoon mustard powder
    • 1/2 tsp dried thyme

  • Combine all spices in a bowl and mix thoroughly.

  • Remove thawed culotte from the package and pat dry with a disposable paper towel.

  • Generously rub spice blend on all sides. Light grill and preheat to medium-high heat.

  • When hot, place the culotte in the center of the grill and close the lid.

  • After 3 minutes, rotate the Culotte 45 degrees and cook with lid closed for another 3 minutes.

  • Flip the roast and repeat on the other side, 3 minutes, rotate and cook another 3 minutes.

  • Reduce the flame of the grill to medium-low and temp the culotte with a meat thermometer.

  • Once the internal temperature reached 128° F, remove from the grill and let rest for 10 minutes for medium-rare before slicing against the grain and serve with your favorite sides like potato salad and beans.
