It’s fair to say Travis Clark knows barbecue. Hist team, Clark Crew BBQ, has a list of accolades a page long including 2017 KCBS Team of the Year & Brisket Team of the Year, 2017 American Royal Invitational World Champion. We asked Travis about his favorite steak. Here’s what he had to say:

“I love a good steak seasoned perfectly. I’m originally from Kansas and we grew up eating what we called the KC Strip, known mostly as a New York Strip or strip steak. I love the texture of this steak, it’s my absolute favorite. I personally love to get a whole strip loin and cut them to desired thickness. Snake River Farms makes the best beef I’ve ever had. We use love cooking their briskets BBQ competitions but, for me, there’s nothing better than the perfect steak.”

    • 4 - Snake River Farms NY Strip Steak Buy Now +
    • Big Poppa Smokers Double Secret Steak Rub
    • Big Poppa Smokers Little Louies Garlic Salt
    • Eat BBQ Most Powerful Stuff Rub
    • 1 Tablespoon Butter

Directions

Clark Crew Strip Steak

  • Season the steak lightly with Big Poppa Smokers Double Secret Steak Rub and Little Louie’s Garlic Salt. Apply a light to medium coat of Eat BBQ Most Powerful Stuff. Let steaks rest at room temp for approx 1 hour.

  • While steaks are coming to temp. Set your charcoal grill up for indirect heating.

  • Sear the steaks over the hot side of the grill approx 2 min per side.

  • Move steaks to the indirect side and let cook to desired temp – on a 1” steak about 130 degrees.

  • Right as you get ready to pull the steak brush a little butter on the steak

  • Allow to rest, lightly tented with foil, for approx 5-10 min. Slice and enjoy.
