American Wagyu Beef Fajita Skewers

Snake River Farms American Wagyu tenderloin pieces are random sized cuts of filet mignon steak that lend themselves to a fast and delicious variation on classic fajitas. Bring the skewers to the table with a tray of warm flour or corn tortillas and your favorite toppings for a festive meal any time of the year.

    • 1 package (1 lb.) Snake River Farm American Wagyu Tenderloin Pieces Buy Now +
    • Corn or flour tortillas
    • Grilled or raw chopped onions
    • Grilled green and red peppers
    • Salsa
    • Guacamole
    • Sour cream
    • Chopped cilantro
    • Wood or metal skewers. (If using wood, allow to soak in water for at 2 hours to overnight.)
  • Marinade

    • 1/4 cup fresh squeezed lime juice
    • 3 tablespoons olive oil
    • 2 tablespoons honey
    • 1 tablespoon soy sauce
    • 3 cloves garlic, chopped
    • 2 teaspoons chili powder
    • 2 teaspoons ground cumin
    • 1 teaspoon salt
    • 1/2 teaspoon red chili flakes

  • Remove tenderloin pieces from package and discard any excess liquid.

  • Place beef in bowl with marinade. Allow to rest for a minimum of 1 hour and a maximum of 6.

  • Remove tenderloin pieces from marinade and place on skewers.

  • Grilling – Set your grill so it has 2 cooking zones, 1 zone with direct heat and 1 without. Place skewers on the direct heat side and slowly rotate to obtain an even cook. If a skewer is cooking quickly or starting to burn, move it to the cool side. The tenderloin pieces vary in size, so watch carefully. Use a digital thermometer and test the thickest piece. Target an internal temp of 125 to 130 degrees. Remove from grill.

  • Skillet – Place a thin layer of vegetable oil on a flat cast iron skillet and set burner to high. When the skillet is hot, place skewers on the cast iron surface and rotate slowly to get a nice sear on all sides. Turn heat to medium and continue to rotate. Use a digital thermometer and test the thickest piece. Target an internal temp of 125 to 130 degrees. Remove from skillet.
